Happy Leap Year Day?

Happy Leap Year Day! Is that right? How do you say that? I guess since it only comes around every four years I shouldn't be too worried! ;o)

Yesterday was a busy day around the casa!!! My girl and I were cooking and baking up a storm! She loves to be in the kitchen and be my "helper". She likes to "work" hard. I love her and the fun things she says at this age! Pastor graduated from his class at the Baptist Association and they always celebrate the end of the class with a potluck. It was yummy! We made Shepherd's Pie and Oreo Peanut Butter Brownie Cakes. Mmmmm....

There are so many variations to Shepherd's Pie but here is how we make it in our family! It's my aunt's recipe. :)


Here's your ingredients! I used the largest bag of cheddar cheese, 2lbs of ground beef, 9 potatoes, 2 cans whole kernel corn, and two cans of creamed corn. You want to preheat your oven to 350. Go ahead and make your mashed potatoes and brown your ground beef seasoning as you prefer. Once that is done you start layering... This is how I do mine but you are welcome to do it how you want! Be sure to spray your casserole dish!

Shredded Cheddar! Pastor says it needs two bags... Bake your shepherds pie for 30 minutes in the oven with foil covering it and then 15 minutes without the foil.




I advise you let it cool for at least 15 minutes before eating so everything is settled and easier to cut.
